Low Salicylate Chicken Hummus Pizza

By the time Evs was old enough to stand unaided, my very clever dad had constructed his grandson a kitchen tower, a solid piece of furniture enabling the little guy to see over the bench and thus be included in the cooking process. From the get-go, Evs absolute favourite meal to make was pizza as he could not only help in the preparations but nibble away at what Dan likes to refer to as his “chef snacks” (basically the leftover pizza ingredients). And thus began a Sunday night tradition – father and son in the kitchen, whipping up pizzas for dinner while bopping away to whatever tune Evs was into that week (it was Bob Marley’s Buffalo Soldier for a long while there). Upon finding out about my salicylate sensitivity, the usual pizza toppings I happily devoured (tomatoes, pineapple, olives, capsicum, etc.) were no longer an option. In order to continue partaking in family pizza night, I came up with this low salicylate version, one which includes a creamy hummus base, topped with greens, sauteed chicken pieces and a generous helping of cheese. What’s so wonderful about pizza is that it’s easily adaptable, catering to those with and without food sensitivity. While I may no longer be able to delight in tomatoey, spicy sauce-laden pizzas, with this version, Sunday night dinners are still as gratifying as ever.

Low Salicylate Chicken Hummus Pizza

Makes 1 pizza

 

Equipment

  • Baking tray 
  • Measuring cups
  • Measuring spoons
  • Cutting board and knife

 

Ingredients

2 Tbsp sunflower oil

1 chicken thigh fillet (diced)

1 pizza base

1/3 cup homemade hummus

1/4 green cabbage (shredded)

1 spring onion (green part only and finely chopped)

2 Tbsp chives (finely chopped)

1 cup tasty cheese (grated)

 

Method

1.) Preheat fan-forced oven to highest temperature. Line baking tray with baking paper.

2.) Heat oil in frypan. Cook cabbage until soft then set aside. Add some more oil then place diced chicken fillet with a pinch of salt in heated oil and panfry for 7-10 minutes. Once cooked through, remove chicken from heat and set aside.

3.) Place pizza base on lined baking tray and spread hummus all over.

4.) Spread cabbage evenly over pizza base.

5.) Spread chicken pieces over pizza along with spring onion and chives. Sprinkle grated cheese all over.

6.) Put pizza in oven and bake until cheese has melted and pizza dough starts to brown (approx. 15 minutes).

7.) When ready, remove pizza from oven, slice and serve immediately.

Note: if you are able to tolerate any medium salicylate foods, you can include some zucchini noodles (peeled) for added diversity.
